Tony Peraza

Pastry Sous Chef

Chef Tony Peraza was originally born in Venezuela and raised in Miami, Florida. A baker and a chocolate lover since an early age, he first demonstrated interest in Pastry Arts as well as a love of chocolate while working closely alongside chef Thomas Lents and Aya Fukai of restaurant Sixteen in Chicago, IL. He then left the Chicago winters and returned to Miami Beach to join chef Jeremy Ford at Stubborn Seed, where he was introduced to one of his mentors: Dallas Wynne. Most recently he is coming from the Walt Disney Company’s Riviera Resort. 

His favorite technical skill is making chocolate bonbons. As it can be very calming while also bringing out an artistic side in him as well.
