Dylan Sobien
Assistant General Manager
Dylan is a native Floridian who began his career in hospitality while attending the University of Florida. What started as a college job working in restaurant kitchens quickly developed into a lifelong passion for food, wine, and exceptional hospitality. He earned both a Bachelor's degree in Food and Resource Economics and a Master of Business Administration from the University of Florida.
After graduation, Dylan began his leadership career in food and beverage management with Marriott before returning to the culinary world to open his own restaurant with a business partner in Gainesville, Florida. Upon returning to Orlando, he served as Sous Chef at The Pinery and Sushi Saint before transitioning into the role of General Manager at Sushi Saint.
Dylan later became the General Manager of Michelin-starred Natsu Omakase in downtown Orlando, where he further refined his expertise in luxury dining and guest experience. He is also a Certified Sake Sommelier through the Sake Sommelier Association and has a deep appreciation for both sake and wine.
Today, Dylan serves as the Assistant General Manager of Ômo by Jônt. Outside of the restaurant, he still enjoys cooking, continuing his education in sake and wine, and exploring the ever-evolving world of food.
